Sweet Potato Pone
How to make my Auntie's fabulous Sweet Potato Pone.
My great aunt made absolutely wonderful sweet potato pone. We traditionally had it as a side dish on special occasions but I know in some Southern circles this dish is served as a dessert. I have warm childhood memories of this dish being served yearly at our annual family Christmas party. Since her passing we have cherished this recipe and we can always count on a family member bringing this dish to the Christmas party to continue her tradition.
Having researched the origins of this recipe, and there are a number of versions out there, its origins are definitely Southern and it can be found in many Soul Food cookbooks. Recipes for this dish are featured in most Soul Food cookbooks and its consistency is one of a baked pudding.
Sweet Potato Pone
Ingredients
6 large sweet potatoes
1 cup raisins
2 cans evaporated milk (high fat)
2 eggs
1/2 tsp nutmeg
1/2 tsp cinnamon a pinch of sea salt
pepper to taste
1/2 cup brown sugar
1/2 cup butter
marshmallows to cover the pone
Boil the sweet potatoes until soft and then cut into small pieces and mash. Add eggs/evaporated milk, raisins, cinnamon, nutmeg, salt/pepper, brown sugar and butter mix together, place into greased pan (9x13) and bake at 350 until thoroughly hot - remove from oven and top with marshmallows. Place back in oven until marshmallows are golden brown. Serves 10-12.
